Bihari egg curry recipe – Egg Masala curry is a popular and tasty non-veg dish of Bihar. It is easy to cook and great in taste. Bihari style Egg Masala curry can be cooked very quickly and easily. Serve it with roti, paratha or plain rice and enjoy the delicious egg masala curry in Bihari style.

अंडा मसाला करी बिहार के एक लोकप्रिय और स्वादिष्ट गैर-शाकाहारी व्यंजन है। इसे पकाना बहोत ही आसान है और स्वाद में बहोत अच्छा होता है। बिहारी शैली अंडा मसाला करी बहुत जल्दी और आसानी से पकाया जा सकता है। रोटी, पराठा या सादे चावल के साथ परोसें और बिहारी शैली में स्वादिष्ट अंडा मसाला करी का आनंद लें।
 




 
Ingredients:
Boiled eggs : 5
Paste of 1 big sized tomato
Medium sized onion finely chopped : 1
Medium sized onion ( Sliced) : 1
Green Chillies : 4
Garlic Cloves : 8-10
Coriander powder : 2 tsp
Cumin Powder : 1 tsp
Turmeric Powder : 1/2 tsp
Kashmiri Red Chilli Powder : 1/4 tsp
Garam Masala Powder : 1/4 tsp
Bay Leaves : 2
Whole Red Chilli : 3
Cumin seeds : 1/2 tsp
Salt to taste
Mustard Oil or any cooking oil of choice : 4 tbsp

 




 

Heat oil and fry the boiled eggs till they turn dark golden brown.
You can use eggs without frying, light fried or dark golden brown.

For masala curry: Heat oil and add whole spices into it.
Let it crackle for few seconds and add chopped onion.

Fry the onion on high heat till it turns light golden brown.

We will add the paste made of Onion, Garlic and green chillies.
once onion turns light golden brown in color.

After frying onion on high flame for 2-3 minutes ,
Add Onion, Garlic and Green Chilli Paste.

After frying for 2-3 minutes – Add Tomato Paste.

Add dry powdered spices.

Add salt as per taste and some water, mix well.

Lower the flame and cover for 3 to 4 minutes

Add Garam Masala powder.

Add a little water and fry the masala for 2 minutes on high flame
till the oil separates.

Add water for curry as per your requirement of thick or thin gravy.

Cover for a minute on high flame and let the curry come
to a boil.

Add fried eggs in the curry and gently stir.

Cover on high flame for 2-3 minutes.

Egg masala curry is ready. Cover and let it rest for few minutes.

Serve the egg masala curry with Roti, Paratha or plain rice.
